To eliminate the "carb-crash" of a traditional pasta Mac and Cheese, we use more satisfying cauliflower florets. Once roasted, we smother them in a velvety, extra-sharp cheddar cheese sauce. To finish it off, we swapped out a standard bread crumb topping for a crispy, pork rind and parmesan cheese topping.

Remove tray from carton. Cook on high for 4-5 minutes. Let stand 1-2 minutes. Remove film, stir, and enjoy!
Note: Microwaves vary, always cook to an internal temperature of 165°
Preheat oven to 350°F. Place tray on sheet tray or oven-safe dish. Remove film and discard. Place sheet tray in center of oven and cook for 20-25 minutes, stirring halfway through. Remove from oven and let stand 1-2 minutes before enjoying.
